Description

The RSA Certificate is required by law for licensees, club secretaries, permanent/casual serving staff, and security staff are required to hold a current National RSA certificate in the liquor industry or anywhere alcohol is sold and served in NSW, QLD, or WA. The Responsible Service of Alcohol RSA certificate is required by law, to provide a duty of care to patrons within premises which hold a liquor licence and to remain up-to-date with current state laws.

Food Safety Level 1

Description

This course is designed for all people handling food in the Hospitality or Retail Food industries. Course content includes:
• Follow workplace hygiene procedures in accordance with enterprise standards and legal requirements.
• Handle and store all items according to enterprise requirements and legal obligations.
• Identify potential hygiene risks promptly.
• Take action to minimize or remove the risk within the scope of individual responsibility and in accordance with enterprise and legal requirements.
• Report hygiene risks beyond the control of individual staff members immediately to the appropriate person for follow up.
• Knowledge of factors which contribute to workplace hygiene problems.
• Identifying general hazards in the handling of food, linen and laundry and garbage, including major causes of contamination and cross-infection.
• Sources of and reasons for food poisoning.
• Knowledge of relevant State/Territory legislation in relation to food handling, personal and general hygiene.
• Correct hygiene control procedures and use of the workplace FSP.
• Understanding of the importance of following hygiene procedures and of the potential implications of disregarding those procedures.
• Ability to identify, explain and follow established enterprise procedures and legislative requirements.

Food Safety Supervisor Level 2

Description

This course is designed for all people supervising food operations in the Hospitality or Retail food industries. Course content includes:
• Food safety hazards are monitored and controlled as required by the food safety program
• Where food safety control requirements are not met, the non-conformance is promptly reported and corrective action is taken
• Food safety information is recorded to meet requirements of the food safety program
• Processes or conditions which could result in a breach of food safety procedures are identified and reported
• Corrective action is taken in accordance with the food safety program
• Use food safety program information to find advice on food safety responsibilities relating to own work
• Monitor food safety hazards as required by the food safety program. This may include methods such as visual inspection, sampling and testing
• Record results of monitoring and maintain records as required by the food safety program
• Identify if food safety requirements or parameters are not met within level of responsibility
• Take corrective action as required by food safety program within level of responsibility
• Report practices or processes in own work that could result in unsafe food
• Follow procedures to identify, separate and report product which is or may be non-conforming and/or implement other necessary corrective action within level of responsibility
• Participate in investigating and reporting on unsafe food as identified by internal monitoring and/or customer complaints

SIT20316 Certificate II in Hospitality

Description

Provides the skills and knowledge for an individual to be competent in a range of activities and functions requiring basic operational knowledge and limited practical skills in a defined context. Work would be undertaken in various hospitality settings, such as restaurants, hotels, motels, catering operations, clubs, pubs, cafes and coffee shops. Individuals may work with some autonomy or in a team but usually under close supervision.

Job roles and titles vary across different industry sectors. Possible job titles relevant to this qualification include:
o bar attendant
o bottle shop attendant
o catering assistant
o food and beverage attendant
o housekeeping attendant
o porter
o receptionist or front office assistant
o gaming attendant

Individuals with this qualification are able to perform roles, such as:
o serving food and beverage to tables
o preparing and serving drinks at a bar
o selling beverages in a retail liquor outlet
o attending gaming machines
o providing housekeeping services
o providing reception or front desk services
o Providing assistance in a catering operation.

SIT20416 Certificate II in Kitchen Operations

Description

The key clients for this qualification may be those aspiring to find an introduction in hospitality. Work would be undertaken in various hospitality enterprises where food is prepared and served, including restaurants, hotels, catering operations, clubs, pubs, cafes, cafeterias and coffee shops. Individuals may work with some autonomy or in a team but usually under close supervision. Learning needs of this group will largely focus on practical skills, knowledge and application including the use of basic organisational skills as pertinent to hospitality in participating in this qualification you have flexibility in the way you complete your training and assessment.
